Cozze ( Mussels )
From the sea to the sidewalks
Cozze “scoppiate” (sauté), i.e. cooked in a pan with garlic, pepper and parsley, they are a great classic of Mediterranean cuisine. In Palermo, they can be found near the seaside, served in an authentic plastic laundry basin because they are usually eaten with lots of friends around a makeshift table, it is a tribal ritual with greasy hands and festive palates. As many other street foods any tool or cutlery is useless. The only needs are hands and no scruples while producing rude noises sucking the mussel directly from its shell.
