Just another flavour

In many zones of the city, quite always near the historical markets or in the squares of the oldest and most popular districts, it is not hard to notice big steamy grilles where different kinds of meat and fish sizzle. Hamburgers, various sausages, meat skewers (filled with bread crumbs, cheese and raisins, according to the Palermitan tradition), steaks, stigghiola, “mangia e bevi” (delicious dainty rolls with bacon and shallots) and so much more. In a few words: anything that can be grilled.

 

Most of the time the grilles are available to people that for just a few coins can cook their own meat on them even though it has been bought in other places. A democratic way to have a home barbecue without a garden.
