The secret of the three droppings
The purpari are to be found among the kiosks, the barrows and the open air tables of the historical markets and the seaside of the city of Palermo. The polpo (boiled octopus) should be dropped in the hot salted water up to three times before being served perfectly: the first to soften it, the second holding the head to scald the tentacles, the third one to cook it to its best. It is served hot with lemon juice, many people love the head, juicy and tasty in its own black sauce, however the appearance is not very pleasant.
